Mat Lindsay is the chef behind one of Australia’s top culinary haunts – Ester Restaurant and Bar in Chippendale. The core of his two Chef Hats restaurant is his philosophy and passion for wood-fire cooking. His experience was honed from working in influential Sydney restaurants, Billy Kwong and Rockpool. He brings to the table his knowledge and skills from the extensive work and travels through Europe and Asia.
