Chef Luciano Monosilio, also known as the “King of Carbonara” is the head chef of Pipero Roma. Often ‘devouring books’ to sate his curiosities of the culinary world and working with celebrated chefs like Crippa and Pierangelini, he believes that only by understanding the discipline can one break it.

 

Luciano’s eloquence of food is reflected in well-conceived dishes that are clear, fresh and always with an element of experimentation. His originality serves up creations with robust character that teases the eyes and reinvigorate the tastebuds.
